Etape 1
Couper finement des échalotes.
Etape 2
Dans une casserole, sur feu doux, faire suer l’échalote avec du vin blanc (et du vinaigre ou le jus d’un demi-citron). Laisser un peu évaporer le vin et vinaigre ou citron.
Etape 3
Au moment de servir, faire fondre 30 à 40 grammes de beurre dans la sauce, puis délayer avec 10 cl de crème fraîche.
